One comment: become a nerd, then all the matches are good!
84 kg - mindorashivili vs ketoev (semis)
74 kg - Saitiev vs Terziev (semis)
all of cejudo matches
all of kudukhov matches
all of stadnik matches (145.5 from ukraine)

BTW the "olympic videos" thread has tons of reccomendations as well. In addition to those posted on this thread I'll reccomend all the 74kg Bulgarian's.

Re: So, what are the good matches from the olympics
Just to jog my memory again... here are my favorites.
55 kg: Cejudo's first match, semifinal and final
60 kg: batriov vs quintana. final match is OK, (pretty boring weight IMO)
66 kg: Shahin vs Garzon, Shahin vs. Stadnik, India vs. Belarus (really any match featuring Shahin, Stadnik, or the Indian guy)
74 kg: Bulgaria vs Gitinov, Bulgaria vs. Cuba, Saitiev's final
84: Mindo vs. Germany, Russia, and the final match
96 kg: pretty boring weight, both semi's are dramatic though not high-scoring
120: pretty boring as well, final is all right, Mussulbes vs. Taymazov features multiple world champs going at it
